Food-grade chitosan, also called chitooligosaccharide and oligomeric chitosan, is an oligosaccharide product obtained by degrading chitosan by special biological enzyme technology (also reported using chemical degradation and microwave degradation technology) with polymerization degree between 2 and 20 and molecular weight ≤ 3200 Da, which is a low molecular weight product with better water solubility, large functional role and high biological activity. It has many unique functions such as higher solubility, total solubility in water and easy to be absorbed and utilized by living organisms, which are not found in chitosan, and its role is 14 times that of chitosan. Food grade chitosan is the only positively charged cationic basic amino oligosaccharide in nature and is an animal cellulose.
